NUT-FREE FUDGE BROWNIE BITES {RAW VEGAN RECIPE} In the world of raw desserts, it’s pretty uncommon to find a recipe that doesn’t call for a large amount of nuts. You know, those recipes that contain about 80% nuts and claim to be healthy. That’s where I initially went wrong with incorporating more raw foods into my diet, eating too many raw “healthy” desserts. There’s really nothing healthy about a dessert that, for example, contains 2 cups of cashews, a cup of almond flour and a cup of coconut oil because in the end “healthy” fat is still fat and too much of it is never good for your body. How To Make Healthy Black Bean Brownies I have a bit of an obsession with finding recipes that sneakily swap in good-for-you ingredients. Chocolate muffins made with beets? I’m there. Blondies with chickpeas baked in? Sign me up. So I was psyched when I came across this black bean brownie recipe on one of my favorite food blogs, Laura Lea Balanced. The recipe couldn’t be easier: Combine seven simple ingredients in a food processor or blender, dump them in a pan, add chocolate chips (because of course), then bake for 50 minutes. Done. “My absolute favorite way to eat them is warmed up with a drizzle of almond butter and a scoop of Nadamoo vanilla ice cream, but I’ve also enjoyed them in a breakfast bowl with yogurt, granola, and fresh berries,” says Laura Lea. Today I give you Cinnamon Roll Bundt Cake for #BundtBakers. I started thinking of using all these exotic spices but then cinnamon buns popped into my head. I wanted something with the real taste of a really good cinnamon bun, you know like the kind you get in one of those lovely cinnamon bun shops in the mall or in a bakery with the yummy cream cheese frosting that gets all over your fingers and face!! MOIST DELUXE DARK CHOCOLATE CAKE MIX(COPYCAT-DUNCAN HINES) INGREDIENTS  2 cups all-purpose flour 1 3⁄4 cups sugar 3⁄4-1 cup cocoa 2 teaspoons baking powder 1 teaspoon baking soda 1⁄2 teaspoon salt 4 tablespoons vegetable shortening TO MAKE CAKE 1 1⁄3 cups water 1⁄2 cup vegetable oil 3 large eggs DIRECTIONS Combine flour, sugar,cocoa, baking powder, baking soda, and salt. Now stir to combine. Add shortening, using electric mixer on medium speed to blend the shortening into the dry ingredients. Completely mix shortening until you can't see any chunks. This is the mix which may be kept in a sealed container for several months. To make the cake: Preheat the oven to 350*F. Grease sides and bottoms of two 9" baking pans, or one 9x13" pan. Lightly flour the greased pans. Blend the dry cake mix(above) with water, oil, and eggs in a large bowl with the mixer at low speed until just moistened.
